Some interesting information has recently been published regarding the nutritional value of eggs. Eggs have been found by the USDA to now have 14% less cholesterol than previously thought (185 mg) and more vitamin D (41 IU) for one large egg. The elevated IU nimber represents a 64% increase in vitamin D.

Eggs have a lot of health benefits. It's actually good for building muscles because it contains high-protein and low-cholesterol.
What if you skip the yolk? Do you know how that changes the nutritional info?
Without a doubt and now with the updated nutritional value (less cholesterol..more vit D) maybe more peple will start to eat them. Thanks
Yes - it dramatically lowers the cholesterol content when you remove the yolk. All the cholesterol is contained in the yolk. Here is a great high, protein, low fat snack that I actually had today. Take a hard boiled egg - cut it open - remove the yolk - scoop in a tsp. of cottage cheese into both halves and top with paparika or diced tomato - yeaahhh!
